Well, hello there! And welcome!

Welcome to Unicorn Foodie! No, I'm not cooking up hot dishes for non-existent animals, but I am feeding folks with unique culinary requirements. It started with my daughter, Abi, who has a bajillion food sensitivities. Then my hubby's body decided that refined sugar was not gonna fly. And then, let's add my GF/DF+ self to the mix. You know what that means? It means any meal that we eat together is challenging, to say the least. But it IS possible! In this blog, I plan to share recipes that I've created or modified to work for us. I'll also do some restaurant reviews, places I've found that are willing and able to work with this herd of unicorns. Restaurant week = restaurant review

1/20/2020 Hey, y'all! Poppin' on for a minute, mainly to put up another restaurant review, but to check in. So, we had tacos for lunch yesterday. And I regret it. Beef is not supposed to be on this Unicorn's menu, but when you have unexpected guests, you do what ya gotta. Ground beef was the only thing we had enough of to feed 5, so tacos it was. I used corn tortillas, which are less reactive for me than wheat, but I shouldn't have had those either. Now, today, I feel kinda gross. But, it is restaurant week here in Charlotte and Hubster and I try to pick a spot that we've not been to before. After reading many menus and scoping out locations, we decided on Fiamma. Yes, an Italian place. Am I crazy? No. They had scallops as an appetizer choice. Scallops are my weakness. Hubster will eat anything, so I knew he'd be happy anywhere. Lasting reminders

So very grateful to be on this side of surgery and well on my way to fully recovered! I've learned many things in the last couple weeks. 1. My husband really is Superman. He has doted on, taken care of, and loved on me over and above the normal these past two weeks. He even vacuumed! He hates vacuuming. I have a real winner, my soul mate, and my best friend. #betterorworse 2. My friends are amazing. My pal, Jane, set up a meal train for 2 weeks for us. Just the first few days, then every other day for 2 weeks. That thing filled up in less than 48 hours! And then people who didn't get on the list brought or sent food anyway! We are still eating leftovers! I didn't think we would need this service. Michael taught me how to cook, after all. But it was such a blessing to not worry about getting or cooking food. And to experience our friends loving on us was just such a blessing. #getyouaprayerposse 3. I will have scars. I was pondering these 5 healing holes in my abdomen today
